The following Business Spotlight includes a Q&A with Kristy Andrew, owner of Kale‘n Thyme.

Kale‘n Thyme offers fresh, natural leafy greens and herbs to our community.

Why did you start the business?

The lack of fresh produce in Cordova is why I wanted to start the farm. I’d just moved up here from Oregon where fresh produce is abundant and can be purchased at any grocery store. I wanted that to be available here in Cordova.

What was your process for setting up your box container farm?

I came across an article about box container farms that were being used in New Jersey. It took me a year to find out who made the farms. I had never farmed before so I took online classes about hydroponics, aquaponics, germination, and other farming classes. I toured other box container farms, researched different companies, chose one, and moved forward to where we are now with one fully functioning box container farm.

What types of greens are you currently growing?

We have our staples of green leaf and romaine lettuces, mini and baby leaf lettuces, kale, arugula, basil, chard, chives, cilantro, dill, mizuna, mustard, parsley, rosemary, sage, shiso and thyme.

How does your business impact the community of Cordova?

Farm-to-table produce is the most nutrient rich and we are happy to be able to provide healthy, locally grown food to Cordova. We see our greens as just the beginning of a larger variety of farm-to-table produce for the community.

How can people buy from Kale‘n Thyme?

People can subscribe for weekly greens on our website at www.kalenthyme.com. They can get as much or as little as they want, and they can add on specific items from our weekly inventory. We offer delivery on Friday and farm pick-up on Saturday. We also keep a cooler at Nichols’ Frontdoor Store stocked with a variety of produce during the week.
